Spiced Mincemeat
Ingredients
- 2 lb. apples, chopped
- 2 lb. currants
- 2 lb. ground dates
- ½ lb. ground almonds
- ¼ C good brandy or pineapple juice
- 1000 mg vitamin C (crystals or crushed tablets)
- ½ t cardamon
- 2 t cinnamon
- 1 t nutmeg (preferably freshly grated)
- ½ t allspice
- ¼ t cloves
Directions
Stir vitamin C into liquid and mix with all other ingredients. Cover and place in refrigerator 3 to 4 days. Transfer to small freezer containers and freeze. Thawing then produces the consistency of cooked mincemeat. For pies and tarts, use Raw Pie Shell (p. 42), June, 1976 Bulletin, or use as a topping for ice cream, piima, or custard.
