Dr. Jo’s Spicy Fish
Ingredients
- 2 large Swiss chard leaves
- 2 fillets Dover sole (or other white fish)
- ¼ cup celery, diced
- ¼ cup red onion, diced
- Sea salt (optional)
- Cayenne pepper
- ¼ grated jicama
Directions
To wilt chard leaves: bring water to boil, hold chard leaves by stems and dip into boiling water until just wilted. Dip into cool water. Trim out stem.
Mix together: 1 tablespoon dry mustard and 1 teaspoon lemon juice.
Lay fillet on wilted chard leaf. Spread half of the above sauce on the fillet. Cover with chopped onion and celery. Sprinkle with sea salt (optional) and cayenne pepper. Sprinkle with more lemon juice. Roll up chard and fish. Steam on a flat surface until the fish flakes easily. Top with grated jicama.
