Stevia-Sweetened Orange Cup Yams
Although sweet potatoes and yams are starchy foods, we understand they may be consumed to celebrate certain holidays, and during other times of the year. To that end, we have provided this recipe for stevia-sweetened yams in the hopes that it may be used in place of sugar-sweetened yam recipes. Enjoy, and as always, we recommend consuming starches with protein and fat, such as with the Grassfed Roast Beef recipe from earlier this week!
Ingredients
- 3 Organic oranges
- About 2 medium-size organic yams or sweet potatoes (choose orange not white as orange indicates the presence of nutrients)
- 3 tbs. (or to taste) organic coconut oil (expeller-pressed)
- ½-1 cup pastured chicken stock or filtered water
- ½ cup fresh orange juice from the oranges above
- 1/4 tsp. Sea Salt or Redmond Real Salt
- 4 drops organic stevia
- ½ cup organic raw pecans or walnuts
- ½ tsp. organic cinnamon
Kitchen tools
- Potato masher
- Citrus Juicer
- Casserole dish
Step 1
Peel and dice yams. Be sure to remove any brown spots or eyes.
Step 2
Bring to boil and simmer, covered with the chicken stock until soft (about 10-15 minutes).
Step 3
Cut the oranges in half and juice them.
Step 4
Scoop out their flesh leaving the rind intact. Discard the flesh that’s left.
Step 5
Pour off any extra liquid from your yams and save to flavor another dish (like soup). Add the orange juice, coconut oil, sea salt and stevia. Mash the yams until they have a smooth, thick texture.
Step 6
Stuff the orange cups with the yams and bake at 375 degrees F. for 15-20 minutes until they turn a little brown on the tips.
Step 7
Top with chopped pecans and sprinkle with cinnamon.
