Quick Breakfast Eggs (Zucchini)
Shred zucchini and red or Maui or Vidalia onion into a saute pan and with small amount of coconut oil, cover and steam over low heat. When nearly tenderized (several minutes) make a depression in the vegetables and add eggs to poach in the steam. Watch carefully to cook the whites but keep the yolks raw.
