12 Boy Curry

Ingredients

Place ½ stick of butter in frying pan on low heat and add:

  • ¼ cup chopped onion
  • ¼ cup chopped celery
  • ¼ cup chopped green pepper
  • 1 inch or less chopped ginger root (optional)
  • 1 whole chopped apple (skin, seed, but not stem)
  • Fresh coconut, grated or sliced thin with a potato peeler
  • Small clove of garlic (optional)

In a separate bowl, place:

  • 2 rounded tbsp arrowroot
  • 1 tbsp curry powder
  • Seasoning salt to taste
  • ½ cup vegetable broth or chicken broth

Directions

Mix powders until well suspended in the broth and add heat until thickened and the arrowroot has turned clear.  Add 1 ½ cups diced cooked chicken, shrimp, fish, sweetbreads, mushrooms, or sprouted legumes, choosing one of these or several.  If you are using fresh coconut, save the milk and use it as part of your liquid.

A starchy vegetable or legume of your choice is placed on your plate first, then a serving of the curry, followed by the condiments of your choice.  Serves four.
