Cricket Power Balls
Makes 20 balls
These cricket power balls take only a few minutes to make, store well, and are convenient on-the-go food you can feel good about feeding your family. They rely on sustainable and nourishing insects for their protein, use coconut oil for their fat, and are minimally sweetened with the perfect amounts of dates and raw honey to draw out the flavor from the cocoa powder.
Ingredients
- 1 cup sunflower seed flour
- 1 cup unsweetened shredded coconut, plus extra for rolling
- ⅔ cup high-quality cocoa powder
- ½ cup organic cricket flour
- ⅓ cup virgin coconut oil
- ¼ cup raw honey
- 16 regular or 8 Medjool pitted dates
Directions
Combine all the ingredients in a food processor and process until smooth. Divide the mixture into 20 equal portions and roll into balls with your hands until uniform, then roll in additional shredded coconut to coat. Cover and store at room temperature for several days, in the refrigerator for several weeks, or in the freezer for several months.
