The effects of dietary nitrates on macular degeneration risk have been measured for the first time, and the results are promising. A study of over 2,000 Australians age 49 and above showed that those who consumed 100-142 mg of vegetable nitrates daily had a 35 percent lower risk of developing early-stage age-related macular degeneration (AMD) over a period of 15 years than those who consumed less than 69 mg.
