Researchers from Linköping University, Sweden, compared different ways of preparing fresh spinach to determine which methods would provide the highest quantities of the antioxidant lutein, which is degraded by heat. Lutein is known to have various health benefits, including the ability to reduce inflammation in the immune cells of patients with coronary heart disease. The best natural sources of it are dark green, leafy vegetables, and it is found in other green and yellow vegetables as well.
