The Glycemic Index
The glycemic index, developed about 20 years ago to help identify foods that would be useful for diabetics, is a measure of how much a food affects a person's blood sugar. Although the glycemic index was first intended for diabetics, its use has been extended to other health conditions that are affected by blood sugar regulation. Our purpose here is to describe the glycemic index and how it can be used to improve health.
