Misinformation on the so-called dangers of cholesterol, saturated fats, and red meats has been a boon for the soy industry. Per capita meat consumption has dropped to its lowest level since the early 1960s; grocery shoppers interested in meatless selections are increasing at a rate of over 20,000 per week. According to the Soyfoods Association of America, about 13.6% of the US population now consume ersatz soy-based products like hot dogs, sausage, bacon, cheese and frozen desserts.
