Sautéed Spicy Spinach
Serves 4

Cook time: 10 minutes
Ingredients
- 1 tablespoon avocado oil, bacon grease, or coconut oil
- 1 large red bell pepper, diced
- ¼ teaspoon cayenne pepper or red pepper flakes
- 1 small yellow onion, diced
- Juice of 1 lemon
- 8 cups baby spinach
- Sea salt, to taste
Instructions
- In a large skillet, heat avocado oil over medium-high heat. Add bell pepper, spices, and onion. Sauté until the onion starts to brown, about 5-6 minutes.
- Add lemon juice, spinach, and salt, stirring frequently as spinach wilts. Remove from heat just as spinach softens and turns dark green, being careful not to overcook.
- Serve warm with any meat or main dish.
