Sautéed Spicy Spinach

Serves 4

Prep time: 10 minutes

Cook time: 10 minutes

Ingredients

  • 1 tablespoon avocado oil, bacon grease, or coconut oil
  • 1 large red bell pepper, diced
  • ¼ teaspoon cayenne pepper or red pepper flakes
  • 1 small yellow onion, diced
  • Juice of 1 lemon
  • 8 cups baby spinach
  • Sea salt, to taste

Instructions

  1. In a large skillet, heat avocado oil over medium-high heat. Add bell pepper, spices, and onion. Sauté until the onion starts to brown, about 5-6 minutes.
  2. Add lemon juice, spinach, and salt, stirring frequently as spinach wilts. Remove from heat just as spinach softens and turns dark green, being careful not to overcook.
  3. Serve warm with any meat or main dish.
