Salmon Chemically Made Pink
A legal dispute between a biotech firm and the food processing giant Archer Daniels Midland has brought to light the fact that farm-raised salmon are given a chemical to make their flesh pink. Igene Biotechnology has charged ADM with stealing company secrets on a new, cheaper method of producing the chemical. Called “astraxanthin,” the compound is extracted from a yeast.
