Split Pea Curry Dip
Ingredients
- ½ cup dried split peas
- 1 ½ cups water
- 1 tablespoons onions, chopped
- ½ cup carrot, sliced
- ¼ teaspoon curry powder
Directions
Cook peas until well done, about 1 ½ hours. If necessary, add more water to prevent burning. Allow excess water to cook off. Cool. (Peas should have the consistency of applesauce.) Saute onions and carrots In butter over low heat. Stir into split peas. Add curry powder. Blend mixture until carrots are well mashed. Mixture will thicken as it cools. Serve as a dip for raw vegetables.
Makes about 1 cup.
