Salad Wraps
This unique salad is high in vitamin C (tomatoes and peppers) and beta-carotene (peppers and lettuce), and the peas provide a fair amount of protein, potassium, and iron.
- 1 cucumber (the Japanese variety is tastier)
- 2 plum tomatoes
- ½ cup of fresh peas (preferably uncooked)
- 1 green pepper (Editor’s note: try a red or yellow bell)
- 1 tbsp. fresh basil
- Romaine or Boston lettuce leaves
Dice cucumber, tomatoes, and pepper. Mix with peas. Mince basil and add to mixture. Spread mixture onto lettuce leaf and roll up. Secure with toothpicks and serve.
