Papaya Seed Dressing

Ingredients
- 2 tablespoons fresh or 1 tablespoon home-dried papaya seeds
- Several drops (2 to 7, or to taste) stevia extract
- ½ medium onion (Maui onion if you can find it)
- ½ teaspoon Celtic sea salt
- ½ teaspoon poupon mustard, or more to taste
- ¼ cup freshly squeezed lemon juice, or to taste
- 1-⅓ cups organic extra virgin olive oil
- 1 teaspoon freshly grated ginger root (optional)
Directions
Blend all ingredients until smooth. Keep refrigerated in small 4-ounce jars. It is delicious over fresh greens such as lettuce, chicory, Belgian endive, New Zealand spinach, and sprouts.
