Oriental Salad
Tips: Try to buy poultry that is raised locally and is free of hormones and antibiotics
Ingredients
- ¾ cup chicken, cooked, cooled, and cut into cubes
- cup bell pepper, cut into slivers
- ½ cup snow peas
- ½ cup celery, slivered
- ½ cup bean sprouts
- 1 cup watercress or parsley, chopped
- ½ cup jicama, cut into strips
Directions
Put chicken and vegetables in salad bowl. Pour Ginger Dressing over salad and toss. Serves two.
Ginger Dressing
Ingredients
- 3 tablespoons olive oil
- 1 – 2 tablespoons lemon juice
- 1 teaspoon freshly grated ginger
- 1 clove garlic
Directions
Mix and let sit for a few minutes. Pour over salad or cooked vegetables. Makes ¼ cup.
