Oat Bran Muffin

Ingredients
- 1 cup oat bran
- 1 cup oat flour
- ½ teaspoon salt
- 1 tablespoon baking powder
- ¼ cup honey
- 2 tablespoons oil
- ½ cup milk
- 1 egg
- ½ cup raisins or currants
Directions
Mix dry ingredients in a large bowl. Mix honey, oil, milk and egg in blender, Pour contents of blender into dry ingredients. Add raisins and stir just until dry ingredients are wet.
Spoon into greased or paper lined muffin tin. Bake for 18 to 20 minutes at 400 degrees.
Variation: Add 1 cup blueberries instead of the raisins or currants. Add ½ cup chopped nuts, or 1 cup cubed apples and 1 teaspoon cinnamon.
Yield: a dozen muffins.
