Minty Cacao Carob Fudge

[Healthy Holiday Recipes]
Ingredients
- ½ cup organic raw almonds
- ½ cup organic raw walnuts
- ½ cup organic raw pecans
- 3 tablespoons raw organic pine nuts
- 1 cup raw organic cacao powder (cacao beans or nibs ground fine)
- 1 cup raw organic carob powder
- ⅓ cup organic coconut butter
- ⅓ cup organic cacao butter
- ⅓ cup plus
- 1 Tbs. raw unheated honey or 1 ½ Tbs. stevia powder (Stevita® brand was used in our test kitchen)
- ¼ cup filtered water
- 5-8 drops peppermint oil (optional)
Directions
In a food processor with S blade, process almonds, walnuts and pecans until finely chopped. Add carob powder, cacao powder, and pine nuts; process until mixed. Place coconut butter and cacao butter together in bowl or cup. Set this container in hot water until the butters are melted-do not cook. Add the honey and ¼ cup water to the melted butters, mixing thoroughly. Add peppermint oil to liquids before adding to dry mixture. Gradually add this liquid to the mixture in the food processor while the processor is running. Process until ingredients are well mixed and a dough is formed. It will be soft and greasy.
Line an 8 X 8 baking pan with wax paper (this helps to lift the fudge out of the dish when solid). Press dough firmly into lined pan, spreading evenly. Smooth out top. Sprinkle pine nuts or chopped nuts on top and gently press them into the fudge. Refrigerate for 1-2 hours until firm. Cut into bite-sized pieces and enjoy! Fudge will keep in the refrigerator for several weeks.
Variations:
Use only one type of nut, such as almonds or pecans.
Use any other nut of your choice (cashews, pistachios, etc.) instead of one or more of the listed nuts.
Use agave nectar instead of honey.
