Looks Like Pasta (Zucchini)
Shred:
- 3 firm green zucchini
- 3 firm yellow zucchini (or yellow crookneck)
- 3 medium carrots
- 1 small Maui or other sweet onion
Use a mandoline or other similar cutter or salad shooter or knife to cut long thin slices (⅛ inch to resemble pasta).
In a wok or saute pan heat:
- 1 tablespoon coconut oil or more if needed, and
- 1 tablespoon butter over low heat
Add:
- 2 minced cloves of garlic and the shredded carrots, saute 6 minutes, then add the squash.
Add:
- 1 ½ cups minced fresh basil
- ¾ cup parsley (minced or scissor snipped in a cup)
- ½ cup minced fresh chives or green tops of scallions,
- 2 tablespoons fresh marjoram minced
- 1 ½ teaspoons kelp or dulse or mixture with Trocomare*.
Stir gently for several (3 or 4) minutes. Transfer to warmed serving bowl and sprinkle with ½ cup of a good raw hard cheese such as parmesan. ENJOY!
*a sea salt with ocean vegetables, available at health food stores
