Light-As-Air Muffins
Ingredients
- 3 eggs
- 1 tbsp baking powder
- 1 cup water
- 1/3 cup canola oil
- 2 tsp pure vanilla
- ¼ tsp Stevia (OR 1 tbsp honey)
- 1 ½ cup quinoa flour
Directions
Separate 3 eggs – put the whites in bowl beater stiff, add 1 tablespoon home made Potassium Baking Powder, set aside. Put the 3 egg yolks in a blender with 1 cup water, 1/3 cup canola oil, 2 teaspoons pure vanilla, 1/4 teaspoon Steevia (or 1 tablespoon honey), add 1 1/2 cups quinoa flour. Blend. Fold blended mix into egg whites and fill oiled muffin pans. Bake at 350 degrees for 25 minutes.
