Greatest Green Beans

I think I learned this recipe on the back of the turkey bacon I used to buy in chiropractic school. I’m glad I finally upgraded to good quality, local pork bacon!

Ingredients

  • 2 cups green beans, chopped
  • ½ cup onions, chopped
  • 1-2 cloves of garlic, chopped
  • 3 strips of bacon
  • ¼ cup pecans
  • Dash of salt
  • Optional: Olive oil for drizzling

Instructions

  1. Cook the bacon in a pan to your liking.
  2. Remove the bacon, but leave the fat. If you need additional fat, add your favorite (I prefer lard or butter).
  3. Sauté the onions, garlic, and green beans in the bacon fat until they are cooked the way you like them. I prefer mine just a little crispy.
  4. While the vegetables are cooking, chop the bacon. Add it back to the pan.
  5. Sprinkle with pecans and sea salt.
  6. Once you remove from the pan, drizzle with olive oil, if you’d like.
