Book Review: The Sweet Miracle of Xylitol
The author begins by addressing America’s monumental sugar addiction, and describing the horrific consequences of the high-sugar, simple-carbohydrate diet. Obviously, she recommends xylitol as a partial antidote.
Xylitol, often made in Finland from birch trees, has been approved by the FDA as a food additive for more than 25 years. It is also found in nature in berries, mushrooms, lettuce, and corn cobs [Ed. Note: the latter source is the most common at present]. No Johnnie-come-lately, xylitol has been known in the field of organic chemistry since 1890!
