Alternative Food Safety Technologies: New Methods Can Help Ensure Safety Along the Farm-to-Table Continuum
Food poisoning is a major public health problem, causing 9,000 deaths and up to 33 million illnesses each year. Contaminated meat and poultry are responsible for many of those deaths and illnesses. While irradiation has received significant publicity recently, a whole raft of other technologies can help to make meat and poultry safer. Irradiation is of concern because it may add up to five cents per pound to the cost of ground beef, according to USDA estimates, may result in taste and nutritional changes to red meat, and could introduce risks to workers and the environment.
